Chicken Tikka Masala

Ingredients

Meal Genie Paste2 Tbsp
Salt2-3 tsp (or according to taste)
Boneless Chicken1 Pound
Vegetable Oil2 tsp
Tomato Paste2 tbsp
Heavy cream¾ cup
Chopped Cilantro(optional)

Preparation

Step 1

Original chicken tikka recipe calls for grilled chicken. We can use grilled chicken or to make it quick, or cook the chicken in the skillet. 

Optional step for chicken grilled 

*Chicken grill steps can be made 2 days ahead. Cover; chill. Reheat before serving.

Preheat broiler. Line a rimmed baking sheet with foil and set a wire rack inside the sheet. Arrange chicken on a rack in a single layer. Broil until chicken starts to blacken in spots (it will not be cooked through), about 10 minutes.

When not using grilled chicken

Heat 2 teaspoons of oil in a large skillet or medium saucepan over medium heat. Put chicken and cook chicken for 5 minutes.

Step 2  

Add genie paste, tomato paste and cook for 5-7 min. Add the seasoning per your spice level. Simmer, stirring occasionally, until sauce thickens and chicken is cooked. Put the cream and cook for another 3-4 mins. 

Can be served with steamed rice or bread
